What initiated your interest in cooking?

My parents encouraged us kids to appreciate good food

Where else have you worked?

I spent 10 years in Queensland, Australia.

What advice would you give to a novice?

Be prepared to give up a lot, this is not a trade to be half hearted in!

What has been your most memorable (or unusual) meal?

I have just come back from Paris, where I had an amazing Cassoulet. Also sushi in Tokyo blew me away.

What is your favourite local ingredient?

Old spot pork belly

Dave Grohl, Uma Thurman, David Attenborough

Do you have a favourite place in the Cotswolds?

The Old Passage Inn at Arlingham is a beautiful spot with good food
