Cotswolds Distillery’s perfect summer cocktail, Gin Faisán

Cotswolds Distillery, proud producer of Outstanding Natural Spirits, introduces its own unique summer cocktail - The Gin Faisán, created using locally sourced Cotswolds Dry Gin.
Our gin is a blend of 9 botanicals, one of which is fresh pink grapefruit peel. When coming up with a perfect serve for our gin we decided to focus on the grapefruit aspect and create a Gin Faisán; a Cotswolds twist on the classic tequila-based Paloma. Deciding to opt for gin instead of tequila, and taking inspiration from the original name (Paloma means dove in Spanish) we renamed this tasty tipple the ‘Gin Faisán’ (faisán meaning pheasant in Spanish).
• 50ml Cotswolds Dry Gin
• 50ml Fresh pink grapefruit juice
• 15ml Fresh lime juice
• 10ml Sugar syrup
• Top with cold soda water
• Pinch of salt
To make the sugar syrup, fill a jug with 100ml warm water and add to this 100g of sugar, stirring until fully dissolved. We’re only using 15ml in this recipe (which makes one serving) and so place the remainder in the fridge to be used at a later date (it will keep for a good few weeks).
To make the Gin Faisán, place the gin, fresh juices and sugar syrup into a cocktail shaker with a good handful of ice and shake until frost appears on the outside. Pour into a tumbler and top with soda. Garnish with a slice of pink grapefruit and a pinch of salt.
